None have lipoprotein and they do have chitin, which is a carbohydrate that makes up the cell wall of fungi and helps to eliminate LDL lipoprotein in the blood. They are rich in vitamins (especially group B), vitamin precursors (eg niacin, retinol.) and minerals (especially the antioxidant selenium, potassium, magnesium or iodine. They have a high content of beta-glucans, which are a type of carbohydrate that enhances and modulates the immune system. The proportion of beta-glucans varies from one species to another.
